Una breve storia del vino

Imagine you are on holiday in Italy. It is early evening. You walk slowly through a vineyard, and the air gets cooler. The sun is low; the light turns golden, and the vines seem almost endless. Heavy grape clusters hang near your hand—sweet, warm, ready. You stop and think: how does this fruit become wine? In this chapter, you will find out. Wine starts calmly. It is only grapes on the vine, with nothing dramatic. At dawn the grapes are cool and firm, and in the afternoon they soften in the heat. It seems normal, like something you could eat and then forget. But inside, something is waiting: sugar, acidity, water, and scent. With time and care, that “normal” fruit becomes something people keep for birthdays, dinners, and long conversations—or even for any evening. This calm beginning is where your wine story begins.

Here is a simple definition: wine is fermented grapes, meaning fresh grape juice or must. Fermentation can be complete or partial, depending on the style. A wine producer does not “create” wine like a machine. Producers guide a natural change. They keep the grapes safe and clean, so the right microbes can work.

The main character is yeast. Yeast is a tiny living fungus—so small you do not see it, but powerful enough to change a whole harvest. There are thousands of types of yeast. In modern cellars, producers often add selected yeasts and carefully control the conditions. Yeast uses sugar as energy and produces alcohol and carbon dioxide. It also produces aromatic molecules—very few, but with a big effect. If the space is clean and protected, yeast works well. If it is dirty or confusing, other microbes can bring sour, strange, or rotten flavours.

People knew this long before science gave a name to it. In ancient times someone crushed grapes, kept the juice, and waited. After a few days, it started to bubble. The smell changed. The taste became stronger. And the big surprise: it did not rot, like fruit juice usually does. It lasted. That surprise became a habit, then a craft, then a tradition.

We can follow wine very far back in time. In Georgia, archaeologists have found residues in clay jars that show wine production around 6000–5800 BC. This shows that people did not just drink grape juice—they fermented it on purpose. Wine is not a modern hobby. It is old knowledge.

Another ancient place shows wine production as a complete process, not as a simple accident. At Areni, in Armenia, a cave winery goes back to about 4100–4000 BC. Archaeologists have found tools to press, ferment, and store—together, in the same site. The tools were simple, but the process was already there: pressing, fermenting, storing, serving.
